A.O.C Côtes de
Provence
White: Grapes - Rolle 90%
and Sémillon 10%
The grapes are manually
harvested very early in the morning for maximum flavours and to obtain a gilded
colour yellow and brilliant. Initial light maceration and fermentation at low
temperature. The fermentation of the wine is effected in new oak barrels. Then
it is aged for six months, the first three first months brings out it's
roundness of flavour. This very typical white wine accompanies goats cheese
very well, or seafood and Mediterranean fish. |
