A.O.C Côtes de
Provence
Red: Grapes - Syrah,
cabernet -sauvignon, grenache
Manually harvested grapes
(quite ripe grapes for a good structure) are debranched, pressed, then
fermented for a long time. Then the wine is aged in barrels of new oak for
approximately 8 months. The subtle association of the barrel of oak and syrah
dominate and gives the wine peppered and spiced notes. The grenache brings
roundess to the wine, the cabernet-sauvignon adds fullness and a powerful
structure. Full with reserve and future, it goes particularly well with game
and dishes that are rich in flavour. Pouring into a carafe before tasting will
liberate its flavours. |
